Ingredients:
- 3 tablespoons chopped green chiles
- 1 bunch green onions (scallions), finely chopped
- 4 eggs
- 5 egg whites
- ¼ C skim milk (can use any type for increased calories)
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 6 to 8 (6-inch) flour or corn tortillas, heated in microwave to soften
- 2 C shredded reduced fat sharp Cheddar cheese or Monterey Jack cheese
Directions:
- In a bowl, mix the green chiles, green onions, eggs, egg whites, milk, cumin, and salt and pepper
- Pour the egg mixture into a nonstick skillet coated with nonstick cooking spray over medium heat. Scramble eggs until done
- Divide the eggs between tortillas, sprinkle with cheese and salsa. Roll up and serve immediately
